INGREDIENTS

Base:
120g Cookies
80g Butter

Cream:
320g Spreadable cheese
120ml Sweetened cream
100g Powdered sugar
70ml Milk
10g Gelatin
10ml Vanilla essence (or 2ml Vanilla flavor)

Glazing:
250g Pistachio cream
100ml Milk
5g Gelatin

Crush the cookies, melt the butter, add it to the cookies and mix well. Transfer everything into a 22-24cm mold with the edges covered with parchment paper. Create the cookie base and keep it in the refrigerator.

Mix the spreadable cheese with icing sugar and vanilla essence. Add the cream slowly and continue mixing. Soften the gelatin in cold water. In a saucepan, add the milk, heat it well and add the gelatin, let it melt. Let the mixture cool and add it to the cream, mix and transfer everything into the mold, spread the cream evenly and place everything back in the refrigerator.

Melt the pistachio cream in a bain-marie. Add the milk and stir until the cream melts and warms up, squeeze the gelatin (softened in cold water) and add it to the mixture, let it melt and bring the cream to room temperature. Take the mold from the refrigerator and add the pistachio cream on top then let everything rest for 3 hours.
